Coffee Granola Recipe
With hints of chocolate, maple, honey, and vanilla, this simple and tasty coffee granola recipe makes for a perfect anytime treat.
INGREDIENTS
3 cups gluten free old fashioned oats
1/2 cup pecans
1/2 cup hazlenuts
3/4 cup coconut flakes
1/3 cup cocoa powder
1/4 cup Peet’s Major Dickason’s Blend ground coffee
2 teaspoons cinnamon
2 tablespoons cacao nibs
1/4 teaspoon salt
1/4 cup coconut oil, melted
1/2 cup honey
1/4 cup maple syrup
1 teaspoon vanilla extract
DIRECTIONS
- Preheat oven to 375°F.
- Add dry ingredients: oats, nuts, coconut flakes, cocoa powder, cinnamon, cacao nibs, salt and ground coffee to a large bowl and mix together well.
- Add melted coconut oil, vanilla, honey and maple syrup to the dry ingredients in the bowl and mix until combined.
- Dump contents of bowl onto a cookie sheet lined with parchment paper and pat down.
- Bake for approximately 20–25 minutes, rotating the sheet halfway through baking.
Note: if you don’t care about getting big clumps, you can bake for 10 minutes then mix it up and bake for another 10-15 minutes. This will make it crunchier!
